Ok...I'll start:
I LOVE my morning green smoothie! Did I mention that I LOVE it!! It used to seem kind of a crazy idea to blend up vegetables and fruits and then drink the result. ewwwww! I realize now that I was imaging how cooked vegetables taste, and the thought of that combined with fruit sounded terrible. I was wrong!! About the taste that is. Raw leafy greens have a very subtle taste, and combined with berries and a banana...that is just a great way to start the day. Very filling, very light feeling, and great nutrition.
My other favorite recipe is for bean/vegetable soups. I use them as a dressing over raw greens and steamed greens for a really great, oil free compliment to the greens. Try the Super Veggie Bean Stew, the Cheesy Yellow Pea and Kale Soup, or the Lemon Spiked Lentil Soup. All of these recipes are here on the site, and they are a great way to get in your beans, greens, and make your salads taste great without any oil.
