RecipEASY: The Best Mousse You'll Ever Eat

Whether you are looking to adopt a nutrient-dense, plant-based diet or just trying to find a healthier alternative to some of your favorite dishes, we have great recipes on our site to suit your tastes! Some of the recipes can look a little intimidating though. That’s why we created a weekly segment called RecipEASY — to make healthy eating easier. We (Kate and Kayla) pick a recipe off our site to break down and give you helpful tips and modifications. Since neither of us are professional chefs, we are always looking for ways to simplify healthy recipes!

The Best Mousse You’ll Ever Eat

Who doesn’t crave something sweet every now and then? Well, if you are like Kate or I, chocolate is a common topic of discussion in our office. When we found out the entire office building was having a BBQ, naturally we volunteered to bring a healthy dessert! We chose to make our version of chocolate mousse because it looked like an easy recipe that we could make a lot of.

We hit a record for shortest shopping list! All you need for this mousse is: avocado, dates, berries (we picked raspberries), natural cocoa powder, and vanilla extract. We found that 3 avocados came out to be about 2 cups — we bought 6 avocados and had just the right amount for doubling the recipe! Find the right measurements here.

 

Aside from cutting the avocados, there really wasn’t much work for this recipe. Just throw all the ingredients in the blender and blend away!

One batch filled up our blender so we had to blend in two separate batches. The first batch we put the dates toward the top, which took a while get blended down to the bottom. Put the dates in first to make blending a little easier.

You can also play around with the amounts of cocoa powder and dates if you prefer a stronger chocolate taste or a sweeter mousse (one of our coworkers wanted a more chocolatey taste). We used raspberries, but using blueberries or strawberries may give it a sweeter taste instead of a little tartness.
