It’s National Potato Day!

Oh the beloved potato. While Americans sorely undereat when it comes to fresh vegetables (only consuming half of the recommended amount of produce), potatoes are the one vegetable we seem to have extra special love for -- probably because they can be prepared as greasy fries and potato chips. Even though potatoes are technically a vegetable, they are more like a starch in their nutritional value. 

That doesn’t mean you need to rule out the good ol’ potato completely! When you’re ordering a meal at a restaurant or preparing your own dish, try having some steamed or baked potatoes as a side dish instead of pasta or rice. Combine potatoes with other nutrient-dense vegetables to make a healthy meal for you and your family.

Instead of binging on french fries (just because something started as a healthy vegetable doesn’t mean that’s how they ended up!), enjoy one of these delicious potato recipes!
