Eating Healthy This Summer: Desserts That Leave You Ready for the Pool

The allure of the decadent dessert is often a hard thing to face. The cake, the parfait, the sweet fruit tart with the glaze…they can melt healthy eating resolve like, well, kind of like that perfect scoop or swirl of ice cream on a hot summer’s day. But eating healthy doesn’t have to be a battle.

Building strong and lasting healthy eating habits is about working with the foods that are good for you. It can be exciting to discover new healthy recipes, cook with friends that are on the same path toward wellness, and try new flavors, spices, textures, and types of veggies!

Eating healthy in this way can leave you feeling light and refreshed after meals. Even ready for a swim!

Of course there is no best healthy food. Not really, since a variety of nutrients is what’s important for our bodies, no matter how old you are or what type of diet plan you follow (vegetarian, vegan, athlete, prenatal, etc.). The fact remains: thousands of different types of micronutrients in fruits, colorful veggies, nuts, seeds, and grains can support a healthy immune system and contribute toward a long life and better quality of living.

That said, there can be bests when it comes to desserts. Of course that might just be my own opinion… but as someone who has a serious sweet tooth and is also committed to healthy eating, I’ve come up with a short list of the sweetest and the healthiest. Enjoy!

Sweet Peach Cobbler

This dessert is delicious in every way. Sweet peaches, cinnamon, and raisins, sprinkled with crushed walnuts, give it both a crunchy and slightly buttery texture. It can be served hot or cold, though since it’s summertime I recommend chilling it in the refrigerator overnight. 

Bonus goodness: freeze some bananas—remember to peel them first—and blend them until they’re at the consistency you like (smooth to chunky). Scoop some out and add one or two dollops to your peach cobbler for a healthy version of a la mode.

Healthy Chocolate Truffles

Warning: easy to eat and make. Almost too easy. These truffles carry chocolate decadence, peanut butter creaminess, and coconut sweetness.

Fresh Fruit and Rich Chocolate Mousse

The power of avocado extends even to the arena of desserts. Dates, berries, cocoa, and vanilla make this healthy chocolate mousse wonderful—and perfect for dipping.

Carrot Cake

This is an ideal cake for summer. It’s light and sweet, with a spongy consistency. The rich cashew cream icing doesn’t overpower the flavors of carrot, currants, pineapple, spices, zests, and juices that make this cake a summer treat and healthy favorite.

Coconut Almond Cookies with All-natural Fruit Preserves

This summer, you’ve probably spent enough time baking in the sun, so why do more by the oven! One of the best things about these cookies—beside the fact that they’re delectable—is that they are raw. Almond butter, rolled oats, shredded coconut, and all-natural fruit preserves combine to make a truly special cookie.
