Food For Thought

Hail the Kale!

Hail the Kale!

Kayla Sheely , 10/07/2015

Today is National Kale Day! Anyone else as excited as we are here at Healthy Food Now!?

Kale is one of the most nutritionally dense veggies and scores a perfect grade on Dr. Fuhrman’s Aggregate Nutrient Density Index (read more about that here). It’s not hard to see why those passionate about healthy eating (us included!) love kale so much.

A cup of raw kale is only 33 calories -- so go ahead and chow down on this super food, guilt-free! Kale is supercharged with nutrients. For your daily vitamin needs, one cup will get you:

  • 684% Vitamin K
  • 206% Vitamin A
  • 134% Vitamin C
  • 26%  Manganese
  • 10% Calcium
  • 6% Iron
  • 5g Fiber
  • 121mg Omega-3s

Need more convincing on why kale is king? Here are some other kale facts pulled from National Kale Day’s website:

The antioxidants in kale may “help protect the brain against Alzheimer's disease and depression.”

If you are a vegetarian, kale’s high iron content can help prevent anemia.

Kale and other nutrient-dense, low calorie foods help “fight diseases linked to heart health like diabetes, depression, and obesity.”

Helping build strong bones, the calcium from kale is “absorbed better than milk.”

Stay tuned throughout the day on our social media (like Facebook, Twitter, and Instagram!). We’ll be whipping up some great kale recipes today and throughout the rest of the week. In the meantime, have your own kaleabration and try one out for yourself!
